What did you have for lunch today?

My appetite seems to be decreasing with old age. I had a burrito Tuesday or so and kept half for later consumption. Today, I sliced off a quarter of what remained, and baked it up for lunch. It was fully satisfying. Of course I added some Swiss cheese and onions, and the result was one happy camper (moi). Do you have favorite ideas for how to make leftovers truly delicious?

I can get by on very small serves nowadays. I'm not very active either which probably has a lot to do with it.

I had "instant grilled cheese" (toast some bread, put cheese slices on the bread as soon as it pops out of the toaster, then stick it in the microwave to help melting) and chicken soup for lunch. As Andy Griffith used to say, it would've been better if it had sat on a Ritz....

I had leftover low-carb pot roast with mashed garlic cauliflower. It was delicious already so I didn't need to do anything to it.

We do not eat a lot and I prepare only what we eat to avoid leftovers. I made shrimps beignets with two kinds of home made mayo.

I'm cooking up a leftover burrito portion right now. I will add onions, cheese and avocado. Often, I bake the "additions" too, but today I will go for "temperature contrast."

I've noticed the decreasing appetite, too. I can't eat nearly as much as I used to. It's too much work for me to add anything to leftovers. Just getting them in the microwave is a big accomplishment.
