I am not a great cook unless it’s chili or something easy. Today after (hopefully) a nap i plan on tackling a vegetable soup recipe I found online. Nothing fancy but green beans, carrots, tomatoes, peas and corn in a vegetable broth. I can’t screw that up, right?
I have been trying to expand my pallet the a little bit while keeping it healthy/relatively low calorie. I made a healthier spinach and eggplant lasagna last week, but that felt far too involved for me.
Soup seems easier. And good for the cold days.
Do you have a type of soup you like to make at home?

I don't make home made soup too often..but if I do, it tends to be something like split pea or broccoli cheese or a turkey vegetable.

I love vegetable soup especially since you can throw in any veggies you like. Can't go wrong especially on a chilly day like today

Now that I am mostly a vegetarian-vegan, I make soup and chowder sometimes once or twice a week. I make bean based soups and home cream of mushroom soup- almond milk- and chowders. Chowder for me is just a milk based soup, like potato chowder. Nothing fancy but good and hearty. Onion and cabbage in clear broth is tasty, too.
