tonight's dinner -- mac & cheese (or cauliflower cheese) with ham

Actually, we had baked macaroni & cheese with ham as well as riced cauliflower (and broccoli) & cheese with ham. I needed to use up the ham, but I didn't have quite enough for a full meal and usually putting it in a casserole is a good way to stretch it... but I just didn't want another starchy dinner.
My waistline and blood sugar levels aren't too happy when I eat a lot of pasta, plus I knew I had a couple packages of riced cauliflower in the freezer (plus a little bit of riced broccoli in the fridge). I made both dishes the same way, just made one with macaroni and one with the riced vegetables. This let me use up some of the random bits of cheese we had in the fridge too.
I'm having my cauliflower cheese and ham with a salad. What did you have for dinner?

Something doesn't want me responding to you as my phone keeps flipping to Andrias page, so I will post this and add to it shortly.
On Saturday we ate at a Mexican place in Ohio. There was so much to eat, we could have gotten one portion instead of two.
On Monday, we had leftover fajitas with chicken, beef, onions, cheese and pablano peppers. I try not to get carried away so later I had what was left without the tortilla shells even though they were like carb.
Your meal sounds very good. Maybe I will try that one day. I've done the riced veggies and neither me nor my husband likes it much, but if I it mean and cheese with it we can have some of both and maybe work ourselves into looking the healthier choice.

Thank you for going to so much effort to reply to me! Phones are frustrating sometimes.
Yeah, sometimes the riced veggies or zucchini noodles are disappointing, but the cauliflower cheese was really good!

@spiderdust I ended up finding some riced cauliflower in the freezer that I forgot I had so I melted cheese with it and it wasn't too bad, actually. I'm not sure that I'd go out of my way to have that, but I stay away from mac n cheese right now anyway, so it's not like I need something to replace it with.
I was actually trying to find who it was that wrote about this when I was putting it together for ideas. But, I had to wing it.
I have had broccoli french fries before that were pretty good. I'm sure my husband wouldn't want to try either one, though, unfortunately.

@spiderdust We do not eat steaks often. I went grocery shopping in Italy, the beef is a lot less expensive there, we bought two steaks. I usually serve chicken or fish for dinner.

Do you like salsa on your baked potato? I always feel like I need some kind of creamy topping on it, whether it's butter or cheese or similar. Maybe that's just what I'm used to and that I'm missing out on some good stuff.
