Yes, I'm talking about food again!

I'm surprised too, in case you were wondering. I realized why. I rarely cook because I am normally home for supper only one to two times most weeks. I tend to see my mom during supper one of those days which then leaves just one day home for a meal. That's most in the summer months. I even used to sometimes do windows until five pm or later and my husband likes to eat earlier so he puts something together
Since I'm now home on disability for a few months I may end up cooking a bit more than normal. Even if I don't share about my food I do tend to take pictures just in case.
I wanted to make something with some chicken I froze some months ago and I found some cut broccoli in the freezer too. I cleaned out a portion of my freezer and threw out old food. I didn't want to have to throw this away so looked for a recipe online. I had to throw out our rice and we have a lot of pasta so wanted something including that as well. I searched out cheesy pasta with chicken and broccoli and thought I found something but it was using stuffing and no pasta.
I decided to make my own recipe rather than take time looking since it was already going on six o'clock. My husband was working and I had a late lunch so I plowed ahead.
I used rottini noodles, cooked, 1 can of cream of chicken soup, some sour cream, 8oz of broccoli cuts, some leftover frozen chicken and cheese. I was going to use Velveeta but I'm sure what we have is outdated so I used thin sliced Colby Jack store brand cheese, a couple slices of baby Swiss, and the rest of my shredded Mexican flavored cheese. I baked it at 375 for about half an hour.
I actually cooked the chicken first to help it thaw and warm it up so I could cut it into smaller pieces. Then once the noodles were cooked I put that into my pan with some of the cheese and began baking it to melt the cheese. I keep adding more cheese and once it was melted added the soup, sour cream and the rest of the ingredients.

@LadyDuck wow, you made a lot of those. Are you freezing some for later use? Yum. What do you put inside? I've made pirogues before, many times but never that, nor stuffed shells or things like that

Sounds like you made the most of the ingredients you had. I rarely use recipes anymore -- even when I do bother to cook. Most of the time I eat plain foods as close to their original form as I can, but I do only eat cooked meats, fish, and poultry. I don't care if I buy them precooked, but I won't eat them raw. I think now that it's colder I'll have to start cooking again. I will probably concentrate on soups.

@MarshaMusselman I've heard frozen is often better than fresh because they are frozen sooner after picking than the markets, even farmers markets, can sell the fresh produce.

@bagarad I've been looking at the vitamin content on frozen produce and there isn't much at all. Maybe there's more benefits than vitamins? I might have to search that out one day

I'm making changes starting yesterday. Hopefully I will continue. I have ingredients for veggie smoothies and once I've used those I plan on sticking with mostly the fresh veggies. I may cook some but I'm wondering whether canned or frozen have vitamins at all.

@MarshaMusselman I made a white sauce once, and then used heavy cream and thickened it. It's fattening, but so delicious!

Thanks it was pretty good, actually. My daughter wanted Mac and cheese and passed it by but she only eats white meat and we prefer dark. There was both in it but it's too hard to tell when mixed with other ingredients. Plus she didn't want the broccoli.

I have made similar dishes and they are awesome. Yours looks FANTASTIC! As for throwing out food, I rarely if EVER do it. I can ALWAYS find a use for whatever I have. But I am pretty creative when it comes to cooking. Well, at least my wife never complains about my cooking, whatever I make, and I suppose that is a good thing since I am the cook in the house.

@porwest I agree with a lot of that. I've eaten the same foods before that others supposedly got first poisoning from. Either I have a very strong stomach it they were coming down with something and blamed the food eaten instead. I also do the same test and even when slightly questionable raw it's still been fine after cooking and it wasn't only me eating it either.
Other times though I will just dump it to be safe. It all depends. Popsicles with ice on them I'll break off and still eat. Finding I've on frozen foods though I'm not so sure about .

@MarshaMusselman It varies really. I can eat things a week or so old. If it passes the smell test it's good IMO. I have yet to get sick, and yet to have eaten something I thought was spoiled. I worked in the food industry for too many years and just know that most things last WAY longer than people have been fooled into believing. Expiration dates are mostly a farce too. It's a date to get it off the SHELF at the store, but the food is actually good weeks after it expires depending on what it is.

Thanks. I've made many casseroles using rice but what we had was too old to use. I try to stay away from pastas for the carbs, but in moderation it should be fine.

Thanks. If my foot wasn't bothering me I could have done it all faster. Course, it would help if I had any idea what I was doing from the start but it short of morphed. ( I wasn't sure that was the correct weird to use, but I hit it spot on).
