Leftovers

I have chicken and dressing left over from last week. We ate that yesterday. I think I need to freeze the rest, as I just cooked a turkey. When I left my brother's house he sent home some ribs he had cooked for a community meal at his church. They had all they wanted, we had some Wednesday night, and he thought Bob would enjoy the rest. The thing is, his ribs were not as tender as we usually make. So. . . I put them in a pan with some beef broth. Hubby mentioned their lack of tenderness, and suggested meat tenderizer. I do not buy that, but I had part of a fresh pineapple. It has an enzyme that will tenderize meat. I made a sweet and sour dish of the ribs, with some seasoned vinegar, a yellow bell pepper and the pineapple. It was very good. We ate it for both meals. I do hate to throw out good food. It is getting close to bed time for me. Over 16,000 residences lost their power today. A lot of them near Kansas City. We did not lose power and I am glad of that. The wind died down, the snow stopped. We could see the streets. Tonight should be a good night to sleep.

Wow 16,000 people is a huge amount of people without power. I am glad you didn't lose your power and I hope others have theirs restored soon! Smart thinking on tenderizing that tough meat you were given. I hate wasting food as well!

That was three power companies over a wide part of the state, but still a lot.

@sallypup I could probably live on beans. I do like milk and eggs and lots of dairy products. If I had to live off the land I am pretty sure I would be a vegetarian.

@GardenGerty Poultry and ham. I've eaten a little of those when I've been out in a restaurant but otherwise have not fooled with either one for months.

@Hannihar It may also depend on the circumstances causing the outages. If everything had been coated in thick ice it would have taken longer. I remember one year it did.

@GardenGerty Here it seems like when our power goes out and other things too it seems to take a long time before it is ok again. I am glad the ribs were good.

Well, the ribs were pre Thanksgiving as was the chicken and dressing in the refrigerator. Since Thanksgiving was not at my house I do not have those massive leftovers.

I'm glad you were able to make a good meal out of those ribs. I didn't know pineapple tenderized meat. Good to know. We're supposed to get snow today. I'm glad you weren't without power.

Pineapple also helps relieve heartburn, although I doubt you have that often as you are so careful with your meals.

Great for you to tenderiz those ribs-- I would have tried a few things too but the pineapple was a clever idea and a good tip for me.

Pineapple is very good for a lot of things, and I prefer fresh. It relieves sore throats, too.

@GardenGerty I do love it too and buy it a lot and add it to stir fries and curries too. Didn't know it helps throats but it also helps to digest protein as well.

Glad your power did not go out. I have not had ribs in a good 6 months boy they sound good The left over food we have we give to our dogs so they do not waste

When we cook them at home they are so tender they fall apart. My brother is concerned about how much weight Bob has lost, and he figures beef is good for anyone.

You sound very frugal. I have noted that pineapple will tenderise meat as that is a thing I never knew before. Glad you were not subject to the power cuts. It must be really hard to keep going in the cold and snow if the electricity goes.

That is a large quantity of people without hydro, especially if its a rural area. If you do not have a generator, I do hope that your power stays on thru the night.

That number of households or customers out encompasses parts of Missouri and the Kansas City area which has a dense population. I am sure some affected were rural. We have had our electric go out before here, but did not this time. We had wind in excess of forty miles per hour.

I try to balance variety and economy. We got two meals from those ribs. If I cook less we have fewer leftovers.

Yes. I do not often have papaya. Both pineapple and papaya are good for digestion, too.
