Underestimating A Person

Why is it; that everyone I run into underestimate the next individual? I get that a lot on my behalf as well. Not everyone holds the same exact knowledge as the next.
I honestly feel educational wise as far as Elementary, Middle, and High school. However, after that no two to three people know the same knowledge as the next. Unless you went to college for a specific career. Being that said, even school book knowledge changes as years go by. Each year the philosophy changes for the better or worst of things. Having book companies product different series and years of college books. Each person goes down a different path in life.
Leading it to be difficult to know exactly how the next person feels in different situations. So how can another person underestimate the next. Then be surprised that the person may know more then themselves. That's when the words of being called; a "Know-it -all" comes into play or they, "Think their better then everybody." How so? if you never underestimated that individual in the first place. Also known as being judgemental.
