Have you ever had or heard of green pepper soup?

I think the ingredients are the same as stuffed green peppers, but I've never made those myself so I'm not sure. I got the recipe from one of the nurses at the place where my mom is living now.
It's either missing some seasoning or it's because I cooked it a bit different. (My sister-in-law will be making it for Christmas, so I will see how hers turns out and see what I need to add differently).

I used 1.5 lbs of hamburger, 2 diced green peppers and one onion. 4 cans of diced tomatoes and rice.
The gal that shared the recipe with me uses tomatoes juice but I like the flavor of the tomatoes in my picture so used them instead. She suggested 1 cup of rice but I made 1.5 cups which may have been too much.
Also I was hoping my daughter would try some but she doesn't like chunks in her food and I already have to puree the diced tomatoes so I also pureed one pepper and the onion. I then added it to the hamburger to cook. I diced the other pepper and more onion and sauteed that as you see in the picture.
Once the meat was cooked thoroughly I added the tomatoes and cooked it a bit more. Once I ladled out a portion for my daughter in a smaller pan I added the chunks of pepper and onion to ours along with most of the cooked rice.
After putting all the ingredients together it only needs to cook for about twenty minutes to get it hot.
Since I didn't want the rice to completely absorb the juice I turned it off once it was done.
The portion I had when visiting my mom Thursday tastted a little better than mine but we didn't discuss seasoning. I try to stay away from normal salt. Once I figure that part out it should be a little tastier but it's still decent.
If you've ever had or made this before I'd like to hear what seasonings you may have used.

I like my family to season their own unless I knew for sure what to add. I did add a bit of no salt to mine and I'm not picky and can enjoy it anyway, but I may need to to email the person to ask about that. Had I cooked the peppers and onions in it the whole time it may have flavored it better just with that.

I use Mrs. Dash because I shouldn't have salt.

@just4him I use something that doesn't have any salt also. It's a store brand product and I use it on my fresh corn and fries too when I allow myself any.
It didn't help this one though. I think the extra rice soaked up the good flavor but I'm not really sure.

That's what I'm guessing. I only used one half cup of extra rice but possibly my four cans of soup were less than a large can of tomato juice.
I didn't add seasonings but I've made something similar before and the ingredients made it's own flavor and this was close to my other recipes.

You could try it out and not use the rice. That would mean it would be more like a soup. You could probably add something else instead, too, like beans perhaps. Although if you've ever had stuffed green peppers adding beans would change the taste, but if you've never had them before then it doesn't really matter what you add to this recipe.

I won't use salt in my cooking for my husband's sake mostly. I do use something that's better but we add it ourselves. I'm thinking rice may have kept the flavors in better.
