Hungry Root’s Southwest Bean Salad

I wanted to maybe review some of the meals I got in this Hungry Root vegan subscription box, just for fun and like an extra little project. I received my package on Saturday and on Monday I whipped together this Southwest Bean Salad, think it is more of a side than an entree.
Hungry Root is a subscription food service that does healthier and vegan (or not vegan, I believe) food. It’s expensive, $69 per week is the cheapest. I got a promo code for over half off, so i figured I would try it this once.
Here’s what was in the “salad”:
1. “Superfood” salad (more like slaw) - shredded cabbage, kohlrabi, carrots, Brussels and possibly some others I forgot)
2. Mixed with a corn cucumber bean salad (kidney and black beans)
3. Creamy avocado dressing
I ate the entire thing (supposed to be 2 servings) for dinner last night. The slaw had been frozen and I had to warm it up on the stove. I liked the taste a lot, although being the spinach snob that I am - the whole time I was thinking - this would be good on a bed of fresh spinach!
Unrelated, I also made a batch of almond-chickpea cookies they sent dough for. Not healthy in the calorie sense, but all natural and vegan ingredients. And they were delicious.
So far, I am liking it. I think I will make the next recipe (I have 3 more entrees to prepare) today and we will see how that goes!
I also wonder, as far as the shredded slaw goes, what makes foods “superfoods”? Do you think that is a gimmick created by food companies to catch our attention? Based on nutrition and vitamin content, I DO feel like kale is, in my book, a “superfood”. Do you feel like “superfood” is going to become the new “all natural” (aka- not regulated by anything, and just a way to up the sales?)
