So, I have returned from traveling and eating a lot of food around the world! I am determined to be active and eat better now that I'm back, so I thought I would share that with you all on here. I am a pescetarian, but I am trying to eat vegan on some days to improve my diet.
Yesterday, for breakfast I wasn't that hungry so I just had some dried apricots.
For lunch, I had a mushroom soup with a couple of wholegrain breadsticks (they sell them at this local vegan supermarket and I love them).
Then, I went to a vegetarian buffet for dinner. It is one of my favourite places to go, so if you are ever in Prague I'd recommend. They have happy hour so you can just load up a plate and you pay a set price instead of paying based on weight like normal. It was such a filling meal!! I had this foccacia bread thing, ratatouille, roasted carrots, herb roasted potatoes, a buckwheat meat alternative (wasn't that keen on it without sauce!), cucumbers, olives, hummus and kimchi.
Then in the evening, I had some corn chips as a snack. Again I bought them from the vegan supermarket. They were pretty good, just tortilla chips.
Have you ever tried vegan snacks? What did you think?

Your meal plans and journey with healthy diet looks like a plan you've chosen. You seem to have high percentage of carbs and veggies in your pyramid of food intake.

I started my year in Paris. Then I did a trip to India and Sri Lanka. Then Amsterdam, Berlin, Vienna and now back to Prague for work.
