Leftovers

We had corned beef and cabbage for dinner last night as is befitting a Irish family in America. And, today it is leftovers. I don't think there is much that is better than leftovers. The flavor is at its peak. All ingredients are tender and tasty. Do you enjoy leftovers?

I do like leftovers and don't mind having them for several days in a row if necessary. I've made the basic corned beef recipe that most people make and find that recipe, blah. Recently I heard of a variation that I'd like to try sometime if I ever remember what it is. It's using horseradish/mustard as a rub and put the brisket in foil and cook it on low in the oven for about four hours. Or in the crockpot, but still have it covered in foil.
I didn't bother buying the meat this year, but just found out it's still on sale till the end of the week, so maybe I'll try it yet this year. My husband doesn't like much horseradish, so I'd have to put less on his section somehow.

@celticeagle For those that like horseradish, yes it is. I like wasabi too, periodically, and I think I like it because it also has a taste of horseradish although much stronger.
I just found out that's because wasabi found in America is a mixture of horseradish, mustard and food coloring. That includes wasabi found in Japanese restaurants located in our country too.

I make an Irish stew with dumplings and I do a big pot to last 3 days. Id have it on day 1 with the dumplings and on day 2 with batch bread and lashings of butter and the next day with potatoes mashed. It does me and hubby for 3 to 4 days. Economical moneywise and also time saving. Cant beat a good Irish stew

I usually cook more portions if I am making any kind of curry. The leftovers, reheated over and over will get thicker and flavorful.
In fact, I just cook chicken curry two days ago. I serve them with white rice. The next day, breakfast was bread dipped in chicken curry. Superb.
