I would, perhaps, think of a dish that you like and then see how you might modify it to make it vegan. For example, if you're making a roast dinner, you could have a nut roast rather than meat, and you can do oil-free cooking for potatoes (or get a vegan alternative).
I have often made vegetable lasagnes or pasta bakes. Sometimes, you can simply remove the meat but other meals you'll need to replace it with something else. Could be extra veggies/pulses or you could use a meat substitute such as Quorn.

Make a vegetable salad and a bean salad and your vegan friend will be in heaven.

It depends very much on what you have in the house or what you can easily buy. Just remember no meat, fish, eggs or any dairy product. The protein will likely come from nuts and pulses (lentils, beans, peas) and the rest of the ingredients will add substance and flavour.
Why prepare a special dish for just one person? It can look slightly rude to have one person eating a vegan dish while everyone else is eating meat (or whatever). Why not make all of the meal vegan then nobody will stand out like a sore thumb!
