Finally I said want to clean our the freezer and will make Cranberry Nut Bread

I can't help Fredo as I'm not that skilled in the baking department. However, I'm sure it tastes delicious anyway.

I make apple nut bread and it actually sunk in the middle. I've found that if i leave it in 10 extra minutes, it doesn't do that. So i think maybe it's the opposite going on here. Maybe take it out 5-10 minutes sooner. Just check with a toothpick to see if it's done. poke it in the middle and if the toothpick comes out clean, it's done. If not, leave in 5 minutes more. Repeat if needed. Not all ovens are alike.

Alas I'm no baker so can't help you with the issue, other than with eating it. It looks delicious, split on the top or no.

Have you tried googling it? My guess would be it is a bit over baked, but not sure, sometimes that seems to happen, and other times not so much.

I always thought that it was the steam rising as the item was baking. I always used that as an indication that it was close to being perfectly baked!!

As other's have said, that is common and not really a problem. My cheesecakes do that sometimes, and that is a bit more of a problem. It happens less often if I don't open the oven door, just turn it off at the appropriate time, and let the oven cool before opening the door.
