What's for dinner? July 1

What's going on the dinner table tonight? Do tell! I'm making Confetti Meatloaf from Julia Turshen's Now & Again cookbook. To go with it I will have mashed potatoes and some steamed asparagus. Nothing fancy at all and the leftovers will freeze well. That's what is happening here. What are YOU having? I want to know!
Here, ricotta takes the place of bread crumbs and/or eggs, and makes the meatloaf super moist.

I don't think I've ever made meatloaf. I'm not even sure I've eaten it. But I've not eaten meat in more than half a lifetime so it's not likely to change now.

I have to save this recipe. I have NEVER considered using ricotta in a meatloaf, but I cannot imagine it could ever be a bad idea. Thanks for the share. I MIGHT even be able to top my wife's meatloaf with this one.

This is a good recipe that I enjoy each month. She also does turkey meatballs with ricotta instead of egg/breadcrumbs in red sauce. Delicious.
