You must be familiar with eggplant. Eggplant or brinjal is known as a large, oblong, and deep purple vegetable. But there is also a kind of eggplant which is white in color. People usually cook it by frying, griling, roasting, baking it, etc. There are some kinds of eggplants,such as: 1. Graffiti Eggplant 2. Italian Eggplant. ... 3. Japanese and Chinese Eggplant. ... 4. Fairy Tale Eggplant. ... 5. White Eggplant. ... 6. Indian Eggplant. ... 7. Little Green Eggplant. ... 8. Thai Eggplant. Among those kinds of eggplants, which ones have you tried or cooked? I have only tried white, Japanese, and thai one.

The ones we commonly get here are the large purple ones (which you call 'Italian', though ours are generally grown in the Netherlands). We call them Aubergine (which is a name that came via Arabic, Spanish and French and is actually the same word as Brinjal). The most common way of using them is probably in the Greek dish called Moussaka, which is an oven-baked pie made from layers of (grilled) slices of aubergine alternated with a meat sauce made from minced (ground) lamb and topped with a white sauce made with flour, butter, milk and egg. It is one of my favourite dishes but takes rather a long time to prepare. Another way of using them is in a dip called Babaganoush (which I believe means something like 'Daddy's Naughty Treat'). In this, the aubergines are roasted whole over a flame until the skin chars (which gives the flesh a smokey flavour), then the now soft insides are scooped out and mixed with tahini (sesame seed paste) and olive oil. It is eaten with pieces of pitta bread or some other flat bread as a starter or as part of a meze (an array of snacks usually served with drinks).

@marguicha I think I've only made it once but I've had it several times in a restaurant (as the starter). I have always thought that aubergine would go especially well grilled with fish, especially oily fish like mackerel or sardines. Of course, I can find recipes online for pairing almost anything but I've never seen it on a restaurant menu.

@owlwings I often make escalivada as a starter. It is a Spanish starter. It has eggplants, zucchini, onions and sweet pepper baked at the oven with olive oil and salt. I only bake the veggies I prefer and eggplant is my favorite.

We call it brinjal.....and I cook it by 2 methods. .. 1.Boil and then mash and cook with onion,garlic, ginger,tomato 2.simply cut in slices and cook with onions, garlic, ginger,tomatoes

@Miss_Leafy Thank you so much.One more method I share with you.Take some brinjals and let them boil.After that let them cool and then peel off the skin of brinjal and fry it with onions, garlic, ginger and tomatoes paste

I usually cook the eggplant with onion, garlic and salt. Next time I will try adding ginger and tomato. Thanks for sharing

I love eggplant. I usually eat the 2 first ones although I have had very small eggplants filled with meat and rice at Arab restaurants.

Japanese eggplant which is shown in number 3 is very common in my place.
