Doing some meal prep

I want to improve my diet now that I'm going back to work. I find that having things prepped and ready to go helps me to stick with a good eating plan. I made myself a salad with roasted chicken on it for lunch. I sliced up pineapple and strawberries to have during the week as a snack. I think I'm going to make some egg muffins so my breakfasts will be ready to go too. I have onion, tomatoes, and zucchini I can saute and mix into the eggs. Maybe a little bit of cheese too.
Do you meal prep at the beginning of the week?

It's very wise to plan meals in advance. This way, there's less confusion and all the ingredients are available. I use to pack lunches the night before, so they were all set for the kids, when they left for school. I like things to be organized, it makes our job at hand easier.

@NJChicaa You are smart to do it this way! If I just take off, giving no thought to what I'll fix, my meal ends up being something fast and very unhealthy.

My cooking isn't complicated so I don't need to prep much in advance. You're smart to do it all especially going back to work.
