What's for lunch?

I just had a tuna salad sandwich and some chips. I bought a big box of assorted chips and so forth from the cheap store..they taste fine, but now I know why they were cheap they have an expiration date of Nov. 4. Needless to say I am, I eating them..although they won't all be gone by that date..not a problem..they aren't going to spoil. Nico also had some juice from the can, and a bit of tuna. Floated his little kitty boat!

I don't eat lunch, just a lot of water. I eat a big breakfast and dinner. I try to eat light for dinner. This evening I'll eat some soy sauce vegetable dish I made yesterday with daikon radish, potato and long eggplant. I put it over rice and savor the flavors of the cooked vegetables. I'll add some shiitake mushrooms, kombu or seaweed and aburage or fried tofu to it this evening.

@oahuwriter I eat veg alot too. as it is generally healthier and lower in calories. Oh and cheaper!!

@TiarasOceanView That sounds yummy. When I made mine, I noticed I was out of relish and celery..I subsituted green pepper for the celery though. I think I will get tartar sauce next time I go to the store.

I had lunch at a mexican restaurant with the bestie. I had a Chile Relleno, beans, a taco and a guac salad.
I love a good Tuna salad sandwich.

Chilie Relleno is what I almost always order at a Mexican place. At the ones I go to it is one of the few lunch dishes that include both rice and beans.

@snowy22315 Mine actually did not have rice, which was a bit of a bummer. It did have beans. I guess the guacamole salad was in place of the beans.
This restaurant has a good choice of lunch things though, some of them a bit different than what I've seen at other places.

@ScribbledAdNauseum I was so happy when our area got a Mexican place...first they got one in the bigger town, and they have one now in the one closer to me which is kind of a local chain. They have excellent salsa.

@porwest I like jersey Mikes the best. Their meat is delicious. It's the best sub place I have been to. Quiznos is good too but expensive.

@snowy22315 It has been a while for me too honestly, and when it comes to subs, it's my favorite even though there are MANY choices these days from Penn Station to Blimpie to Jimmy John's and others. Subway is always my favorite.

That sounds pretty good, kind of like a beef stew, but with pork.
