Big Pot of Beef Stew

Yum, I made a big hearty pot of beef stew to eat over the next few days. I should have made it last Sunday because the previous week was so cold, and tomorrow the weather gets good again. I used stew beef, onions, pepper, bell peppers, mushrooms, potatoes, celery, carrots, tomatoes, garbanzo beans, garlic, lentils, and pasta elbows. It tastes wonderful. I do need to learn to make stew with broth that is not cloudy. otherwise, it's perfect, and dense. I made Grands, Honey and Butter biscuits to go with it. I will make sausage gravy, for the leftover biscuits in the morning for breakfast.

I filter the broth through a paper filter to have it not "cloudy". The taste is not different, but it look better. Your stew sounds delicious.

@jprtist It works well for me and most of the fat stays inside the filter.

If broth is not clear does that means the purity is off like water. I always figured ingredients just cloudy them anyway. I need to learn this point sounds important.

I'm not sure it makes any difference at all to the flavor, it's just that I've seen soup in really fancy places where the broth is colored, but not foggy. It tasted good too, I'd like to know the trick. Perhaps it's cooking the vegetables and meats separatly, then adding them to a filtered stock. I don't know though. Maybe somebody else here can enlighten us.

@crossbones27 True, I'd love to get a chance to read that book on cooking one of the founders of Microsoft funded. It costs hundreds of bucks. I'm not sure, but I think it's called "Food Science".

@jprtist It has similarities to American beef stew but usually eaten like a soup with noodles or French bread.It is more spicy with peppers.

That sounds delicious - are you cooking for the family or just yourself? I live on my own now and can't be bothered with doing something like that just for me.

I cook for myself. I don't mind eatting something like this stew for several days. That pot of stew lasted me two days and a half.

Your stew sounds delicious and hearty. I don’t care what time of year it is. Stew is always great! I pour off the fat before adding other ingredients and don’t have cloudy stew.

Not long, I use a pressure cooker, it really cuts the time. I set it for 35 minutes, let it cook, lose pressure, then added the tomatoes, and macaronis, pressure cooked it all for another 7 minutes. I've done the same with slow cookers, but it takes 8 hours for the same results.
