Saffron is Not so Mellow Yellow

I was watching a recipe show with Jamie Oliver in which he used Saffron and thought how can he use this spice? It's the most expensive spice ever.
Weighing in at at least 5 to 10 U.K. LBs. per gram at the supermarket- that's one expensive spice. I was told it's about $5.00 to $10.00 in Canada for a gram as well so guess what- I won't be using it in my next recipe. Lol!
As many of you know Saffron- one of the world's most expensive spices- is actually the stigma of the crocus flower and is farmed in the Mediterranean, and the Middle East as well as Spain. Their climate lends itself to the best growing conditions to farm the flowers.
Saffron is approximately $500 dollars per ounce because it is so labour intensive to harvest. And although I tasted it once- I'd have to do a heck of a lot of myLotting to be able to buy some. The taste is actually mellow but at these prices I may be looking for a subsitute. Pixabay Free Image

Where do I find a job. Have to be good wages at that price. I am actually one of the few that do not mind straight hard labor intensive things. 50 an hour, sounds great to me.

@MarymargII The crocuses that grow in front of our home are not the same, they are even poisonous. The powdered saffron from "L'Aquila" (Italy) in my opinion is the best. The pistils from Iran are really good, but extremely expensive and "harder" to use, you need to infuse them before, while you directly add the powdered pistils to the meats. I am from Milan (Italy) and our specialty is "saffron risotto".

This is also good to know. AS I said I've only tasted it a few times in special places and very aromatic as you say and delicate. They say Iran is now a big grower

They say that 90% now is harvested in Iran. But Spain used to be the main area or at least a popular one. Btw wonder why we can't grow a few crocus ourselves as I used to have a few growing in the front of my old home. ha! I could be rich!

Yes, I see it in the stores and haven't bought any for awhile. I like the flavour though.
