I was just posting an image in a comment and decided to write a post on this first day of the new year

Yesterday I made my first keto sandwich bread, which worked better than making a chaffle with my waffle iron. The first does take planning ahead the latter can make on a whim. But, it hurts my jaw and the chaffles are harder to cut in half.
I've used this bread for BLTs and Reubens thus far. The one image has avocado on top of the odd shaped ends of the bread.
Happy new year one and all. I did not celebrate last night but I did sleep in a little.
I'm trying extra hard to get things done around the house, cleaning and what not. Eventually, I'll have to get back to my bookwork but not this week. Tomorrow we cleaning windows and fri we heading back to Ann arbor for tests to make sure the stint is doing well for hubby.
I do work today and my new year's resolution is to continue doing keto, trying to organize, and make sure mylot at minimum weekly and not lose notifs.
And please would whomever took my previous keyboard give it back? The is no copyright symbol on this one and everytime I say 'and' it thinks I'm saying 'Ann'. So be forewarned any wonky words aren't my fault other than not looking to make sure.

@MarshaMusselman I never tried to make a chaffle, but I like waffles.

@LadyDuck I like waffles too but now I make mine with either coconut or almond flour to minimize the carbs . And, my syrup is sweetened instead of sugared.

Good guess, Anna. I was clueless until I asked. A paffle has pork rinds included. This had the rinds but nor the waffle maker.

What, pray tell, are chaffles?

Anna guessed it right. It's a sandwich waffle made with mainly cheese and egg. It's not necessarily for breakfast unless you make a sandwich with bacon or sausage.

It has a cheesy flavor so it's more of a speciality bread flavor.

Good Morning to You. I'm glad you found a new bread that you can make and eat, even if it does take a bit more time to prepare. You can freeze this bread just like any other, correct?
Happy New Year as well. It's good to clean on the first day of the year and make things fresh and new again. I hope you enjoy the fruits of that labor in the days to come.

@MarshaMusselman What kind of flour did you use to make this, if you don't mind me asking?

@ScribbledAdNauseum none. It took mozzarella and cream cheese first then three eggs and parmesan cheese and some baking powder.

I didn't clean today since I worked a full shift my main goal is to get cleaning done, organizing, etc.
If I ever make more than one at a time I'd make sure to freeze some but I'll probably eat most I'd this before next week.

@MarshaMusselman I did make a cake without any egg (an experiment here). Haven't tried it yet. I did work outside the house too.)
