Do you often use vinegar in cooking?

I am cooking a mixture of chicken and pork in soy sauce and I put some vinegar.
Actually, it is my least favorite ingredient but somehow it is beneficial because it delays spoilage of food.
It enhances the aroma of food too.
I am using vinegar made from coconut juice.
Do you use vinegar in your cooking?

I don't eat fish paksiw although I cook lechon paksiw. Another dish is adobo.

I do not like vinegar. I sometimes use balsamic vinegar of modena when I eat fresh mozzarella or burrata with tomato. Otherwise I do not use vinegar in my dishes.

Oh yes I do..there is a brand of rice vinegar I use...Napa Valley it is organic and so tasty.
