Do You Have A Favorite Vegetable?

I recently did a post about roasting vegetables. Many said they enjoy eating roasted vegetables too.
As I get older I seem to enjoy vegetables more and more.
I pretty much like all vegetables with the exception of Brussel Sprouts.
I find roasting gives the veggies much more flavor so my days of steaming them are becoming less and less.
So, this brings me to my question...what's your favorite vegetable?

@Marilynda1225 I love butternut squash the best, I do not think that I have ever had spaghetti squash.
What's for supper tonight?
I bought a tray of stuffed shells from M&M Meats last weekend and I think that we'll have those with a slice of garlic bread with cheese. They stuffed the shells with chicken and cheese, they have a bit of marinara sauce on them and look delicious.

I used to not like vegetables at all but as I have gotten older I fell in love with broccoli! I love it with chicken and spaghetti especially.

I eat broccoli almost every day. Maybe as you get older you'll find more that you like

I have no favourite vegetable. I like all vegetables with the exception of bell pepper. It makes me belch for hours - a sensation that I don't particularly enjoy.
I've never heard of roasted vegetables. How do you roast them? Can you give a short explanation, please?

Roasting is very simple.
I take my vegetables, place on a cookie baking sheet, spritz with a little Olive oil, sprinkle with salt and bake in oven until tender.
It's easy

@Marilynda1225 I may try that. How long does it take until a, say, carrot or potato is tender (on average)?

I am rather surprised as I thought my favourite vegetable was a less popular one. My favourite is broccoli. I do love roasted root vegetables but I am too lazy to prepare them often! I agree that roast veggies tend to have more flavour.
I also like sprouts but I never used to. The only ones I really don't like are onions and karela.

Potato, if that's still considered a veggie since some "crazies" say it's not.

I have always liked broccoli and carrots, and as I've gotten older I really like asparagus and spaghetti squash, too
