A new invention: eggplant sandwich.

Good morning, friends.
This morning I woke up late and hungry. I wanted to see what I had so that I could eat soon.
I had half an eggplant, raw, rests of the escalivada. It was not in its prime so I had to eat it soon.
I had mayo I made yesterday and a load of bread.
While I made a toast, I fried 3 slices of eggplant. I brought the mayo and the toast bread to the dining room, sat at the table, added mayo to the bread and topped it with the fried eggplant slices. It turned out delicious.
I will not make another one. All of it was high in calories. But now I can mylot with my coffee at my side. See you around.

@marguicha I love eggplants no matter how they are prepared, may be it's my favorite vegetable.

I made a sort of pickle that in good restaurants here they call eggplant caviar. It is the same thing but more expensive. It is one of the appetizers I often make.

@topffer I make that too, but I call it escalivada. I also place in that same oven sweet peppers and an onion cut in half. The amount of olive oil is high. If there is any left, I dip bread in it.

@marguicha It is not really a pickle, it is done by cooking halved eggplants in an oven with olive oil. They become very soft, and you make a puree with it, it is the caviar. Also a bit high in calories, but very good.

@Nevena83 There are different kinds of people. I have seen it with Brussels sprouts. Some people love it and others hate it.

@marguicha My husband would have to make it; and I can't see him frying up eggplant. We stick to canned soup and frozen chicken tenders. :-( He cooks once and a while.

I had eggplant salad for lunch. I just mixed boiled eggplant with mayo and cheese.

I have never had boiled eggplant. I usually fry them or bake them. I´ll try that.
