What did you have for lunch today?

In these difficult times, we use whatever we have to make our meals, and do our best not to waste stuff.
This was my lunch a couple of days ago. I took some baked chicken I had bought from Safeway, put it on toasted sourdough toast, and added some blue cheese dressing. I also added some Roma tomato for flavor and texture contrast.
It was actually quite good, though it was not something I had ever had before.
Have you been "improvising" during these odd times?

I've also been buying steak (seems readily available) and making smallish steak sandwiches. Or having packaged mashed potatoes (kind of like freeze dried) on the side. I bought some more canned beets and Marie's Blue Cheese Dressingand will get back to my "Coronasalads" soon.

@porwest I've been able to find eggs and have increased my consumption of eggs. Bacon also seems easy to find. Toilet paper and paper towels? Impossible here! Fortunately, I am what I would describe as an "efficient" butt wiper.

@TheHorse Hey, can't knock your Coronasalads one bit. lol. It IS a bit of an odd thing to me that one of the hardest to find meats since this thing got going, is pork. So yeah, you can generally find some beef and some chicken.
I am still having a hard time getting toilet paper and eggs too. Going out for a run today so I will see what's out there.

I am about to have my second meal now. I made veal ribs and potatoes in a Staub cocotte, which is a dutch oven.

@TheHorse I did several days of grilled hot dogs and shells and cheese. I suspect I will do that meal alot.

It seems like I eat ham sandwiches every day lately. Funny thing is they taste better when my wife makes them.

No not yet. I had company so I cooked butter bean with ham, cornbread, friend taters with onions. Pickled beets.

@TheHorse nothingg since it is instant noodle. I never heard of roma tomato :o
