Living in the Province- Fishes for dinner

Fish
Roxas, Philippines
April 5, 2020 4:55pm CST
We had fish.. Or fishes rather for dinner. One, obviously is 'sinugba' or grilled fish. The other one, the covered with sliced kamias or tree cucumber is a bunch of 'tabyos' or sinarapan. It's a tiny subspecies of goby that's endemic to the Philippines. My wife sprinkled the fish with salt, topped it with sliced kamias and onions. Then wrapped it with banana leaves and grilled. I forgot the name of this dish. But it is absolutely delicious! Oh, at the bottom, (partly shown), is 'tortang tabyos'. Something like a fish pattie.

I was born and raised in Manila and we have no province to speak about. But I had the experience of vacationing in provinces courtesy of relatives and friends.

Well... After this quarantine, you should visit your relatives and friends again. It's quite relaxing in the provinces... Here, although we are in the city, our nearest neighbor is about 50 meters away. :). Well, we are close to the edge of the city. :)

Honestly, it's the first time I tried the 'tabyos' wrapped in banana leaves. I think there are more dishes that I haven't tried. :D

They are nutritious viands. We can discover many recipes in this covid time. Let us hope the virus disappears this summer.

A delicious food you have there. Rice and coke would complete that.

In Bicol "tabyos" is a kind of plant/veggie.

I can't see the fish that's wrapped in banana leaves. What does tabyos look like. We also have fish here we make into patties we call it kalamyan.
