Spaghetti Dinner Tonight 04/21/20

Tonight I decided to make a simple spaghetti for dinner. I never use jar sauce when I make this. I use it for other things. But never my spaghetti sauce. I chopped up an onion and put that into the pan. Cooked that up with some olive oil and mushrooms. Then I added two 8 ounce cans of tomato sauce and 2 cans of water. Added in a can of diced tomatoes. Cooked that for a bit, then added 3 tablespoons of minced garlic, a little oregano and a little Italian. Added some sugar to take away some of the acidity. Cooked that for a bit. Meanwhile I cook a box of spaghetti noodles. I set those aside. I am also preparing what I call "poor man's garlic bread." What's that you ask. Glad you did. I take some bread and spread some margarine on the slices. I then sprinkle garlic powder and Parmesan cheese on top. Preheat the oven to 425 degrees F and let those bake for about 10 minutes. Sometimes more, sometimes less. It's a sight thing. Oh yeah, at some point I added a can of tomato paste to thicken the sauce and plopped in about 30 meatballs to the sauce. We will eat it on a bed of noodles with some Parmesan cheese and parsley sprinkled on top. It should be very good. Image is not my spaghetti. But it looks similar.

Can one ever really go wrong with spaghetti? Come to think of it, I have not made it in a while and I think I am due for a batch.

@porwest Well if I am honest, I don't like spaghetti sauce LOL. But if you want to, hopefully you can make some soon then.

Poor man's garlic bread is so easy and economical to make. Sometimes we'll go for real garlic bread, but the nice thing about poor man's garlic bread is that we always have what we need in the house to make it.

@Alexandoy I use garlic in all sorts of variations. Minced, fresh, powdered, dried minced...we keep it all around here.

@porwest For me, I have to be in the mood for spaghetti. Don't get me wrong, I love it, but for some reason I just can't eat it all the time like I can pizza, chicken or chinese food.

Spaghetti is one of those "go-to's" for me. I usually have it at least once a month. Sometimes twice. It's kind of like pizza, fried chicken, and Chinese food. Some things I just never tire of.

Home spaghetti never disappoints! I love these poor man recipes . . . not expensive, not fancy, but it does the trick. Enjoy! Hubby and daughter made spaghetti with meatballs from scratch last night too . . . I was so glad to have a night off from the kitchen!

@porwest I have a fellow mom friend who likes to make almost everything from scratch. One time she told me they were having "spaghetti night". I assumed it would be from scratch, so I asked her what she put in her sauce. She looked at me like I was nuts . . . she said she didn't make her own sauce. She bought the jarred stuff and loved it because it was such an easy dinner. Boy was I disappointed in her . Yay for us who make our own .

I remember when I first met my wife and told her I would make her a batch, she asked what brand I used. I was like, "Brand? What do you mean?" She mentioned Ragu, Prego and some others. I said, "Oh, for the sauce. No, Sweetie, I make my own." She seemed shocked, but to date she always claims its the best spaghetti she has ever had.

Wow, it must have been delicious - definitely one of my favourite dishes :) I can't even remember the last time I had garlic bread **sigh**.
