Not just for Thanksgiving

If you catch many of my discussions you will know that Hubby and I cooked up a large amount of chicken the other day.
It was marinated, then smoked and it is lovely. We are putting variety in with side dishes.
Yesterday I made whole berry cranberry sauce from scratch and stuffing to go with our chicken, and cole slaw.
In spite of how it sounds, really those kinds of foods are not just for Thanksgiving at all. We really enjoyed the change.

We had a turkey in the freezer, that has been there long enough that I wouldn't want to cook it by the next time I have a big crowd here.
So I stuffed it and roasted it just for us on Monday. Didn't make cranberry sauce though.
Delicious, and delicious soup yesterday. And still more to use. I will freeze some.

I have two turkeys hoarded. LOL. I buy them so I have good meals in the summer when school is out.

@paigea I am afraid we might. Farmers produce plenty, it is the packing plants that are the problem and they have had illnesses.

@GardenGerty Now, I am looking for the next one on sale. Hope we don't have meat shortages like some are saying.

I will occasionally make stuffing or cranberry sauce when it isn't a holiday, but it's pretty rare. I also like a good green bean casserole every now and then too. Your meal sounds delicious.

@GardenGerty Stuffing with pork chops sounds good. I'm not a big fan of pork chops, but I do like pork tenderloin

Yep, cranberry sauce and stuffing. Seasonal favorites that we eat all year. I should have made a pumpkin pie.

There is a really simple recipe on the bag of cranberries. When my mom passed away it became my job to make it for family gatherings.

Different families have different favorites. I like rice as well, but hubby does not.

My hubby will not eat pasta, except for my lasagna, so I do not get to have it much at all.

Chicken is inexpensive and versatile. Can be healthy, depending on how you prepare it. I am not always healthy with mine.
