Because nowadays, it can be difficult to find the stuff you need at the groceries. First off, we (our barangay) can only go buy groceries on Mondays and Thursdays. And when I go to the supermarket on those days, there would inevitably be stuff on my list that's not available. I can't go grocery store hopping either, in the hopes the stuff is available in other stores because that would mean I have to start at the very end of the line again at the new store so no thanks. We'll just make do with what's available. So we have a lot of mangoes and my mother wanted to make Mango Graham Ref Cake. I got the cream and the condensed milk... but no Graham crackers in sight. So my mother just made pancakes and replaced the crackers with them. Haha! It's still yummy!
