Veggies that will last in the fridge.

I am not sure if I and doing this out of need or out of boredom. But I´m making a list of the veggies that last longer in the fridge so that I don´t have to call the virus laden boy that brings the groceries too often.
I love cabbage and I can make raw salads up to cooked main dishes. Cabbages (all varieties) last a lot longer than lettuce and other greens. Which takes me to the next step because I love coleslaw and for that you need carrots and apples (both last a lot).
Chard is not as hardy, but better than lettuce. I mix some raw leaves with the finelly shredded cabbage. And as it will last less, I have to be ready to turn most of it into a cream or quiche.
Beets last a lot unless you boil them. And so do potatoes and onions. With all that, I´m ready to forget to call the grocery boy for some time.
And last buy not least. Did you know that if you cut a sweet pepper and don´t want to lose the rest you just wash it and place it in any old corner in the freezer? They will be wonderful for soups and stews in the future.

I remember that when I was a girl, onions were kept by braiding them by their tops. Now they cut all that.

Sounds like you have a good plan for veggies. I love beats but have not had them in a long while, Thanks for the tip on sweet pepper.

@LadyDuck I wonder about what human beings have done to seeds. I don´t much understand transgenic. I may mean less hunger, but there are side effects too.

I work in a kitchen and our hotel has completely changed how we do things.
We have around 40 key workers living with us full time for months so have scrapped the a la carte menu in favour of a daily tdh menu ordered in advance.
Get the orders by 9am go and buy stuff helps us keep stock down and outlay down.
We do generally use fresh food and try to keep waste to a minimum.

@Mike197602 I already do that. But a cabbage, for instance, is enough for maybe 10 servings.

just make menus and batch cook.
By that I mean use fresh stuff for a couple of days and then cook it up inot portions and freeze it.
Quite often fresh produce could be frozen or even pickled for use at a later date.
Lettuce I'm not sure of as I've never pickled it or frozen it

But keeping vegetables too long in the refridgerator will not taste fresh when cooked and you need to pack them properly else they tend to get moulded due to moisture .

@marguicha yes carrots and oranges last long but leafy vegetables like spinach , cabbage get spoilt due to the moisture.

@marguicha oh yes, I ever tried it during the lockdown. It's last for more than a week. But still need to take care and not let the sun shines much to these veggies.

I had an issue where the fridge door didn't close all the way and was partly open for many hours without us noticing. Stuff in the fridge froze including the bell pepper and it was not good to eat anymore. And I just threw away an untouched bell pepper because when I cut it open it was spoiled inside.

@marguicha It closes all the way if you manually do it but if you just give it a push it doesn't always close all the way.

Quite true.. Onions lasts long even without refrigeration unless you get water on them. I keep the excess pepper in the refrigerator for future use and it's still good as new
