What's going on the dinner table tonight? Share with us!
I'm making Katie Lee's Vegetable Manicotti from the Endless Summer cookbook. I might have made it once before but I honestly don't remember. In any case it looks delicious with yellow and greens squash in the ricotta filling. We shall see!

I haven't ever cooked manicotti but I would be interested in this recipe if it's meat-free and doesn't have too much cheese. Nothing exciting for me today (a salad, surprise surprise) but tomorrow I am trying to make a quiche with puff pastry...I am hoping it turns out
