Stuffed!

We overdid it with our date night dinner last night! I served an appetizer of cheese and crackers with my martini. Hubby doesn’t drink alcoholic beverages at home. Next, we had rack of lamb, roasted organic baby potatoes and roasted asparagus. I had a glass of red wine. Hubs had sparkling water. We finished with apple tartlets and coffee. We felt like stuffed pigs. It’s the 4th of July in the USA , our National holiday, and that means a big barbecue later on. At least we played tennis this morning, and I am going to do speed walking right now, but I’ll be back! See you later!

Yeah really heavy but enticing meal! Happy Independence Day to you. US Independence day : 04 July 1776 reminds me of Thomas Jefferson and the Declaration of Independence. However, somehow it looks that US of today is far from the ideals perceived by those who fought for freedom from the British rule. This is somewhat a problem in India as well. We too celebrate Independence day. Yet for many it is more of a show off and giving of speeches rather than trying to work towards the ideals that were thought of then. Or does it means that too lofty ideals are perhaps too difficult to follow or implement. Well, I went a bit overboard!

Thanks! It was a hearty meal for sure, but hubs loved it. Our country is as good as the people who lead it. Unfortunately, we have a real jerk in the White House. I can't wait to see the last of him.

Your meal looks so delicious and I know that it was! We're definitely grilling later on this afternoon, making venison sausage&burgers. Jay is still at Jim's house, so whenever he gets home it can be fired it up!

We had ribeye steaks that I grilled, along with corn on the cob, and potato salad. Nobody touched the potato salad though. The steak and corn was filling enough. My niece came over with her little one much to the delight of Little Miss! She brought her BF and his 3 boys too. Hubby broke out the poppers and sparklers. The kids were delighted. It was a nice relaxing evening.

@DianneN wish we could have gone to see a fireworks display. There weren't any public displays in our area. There was one about an hour drive from us, but you had to remain in your car.

Wow That looks simply AMAZING! I would have over done it at well! TFkr the 4th my husband's step father cooked tons of food! Seafood, sausage,. Potatoes, hamburger, hot dogs etc. It was also simply amazing and delicious!
