Minestrone for dinner.

There´s nothing more delicious than a good soup in winter. And of all the delicious soups, this one full of diced veggies, with some pasta and some shredded spinach or chard (I had chard in my garden) can be more than perfect.
I top it with grated Parmesan cheese. The pesto adds the exact flavor thaat brings me to my childhood, when my half Italian grandmother cooked on occations.
I hd a leek and I added it. That also means that all the time you can change your recipe depending on what you have in the fridge. I did not find beans, so I did not put any.

I'm going to eat in another hour or so and I still haven't decided which microwave meal, lol. Minestrone is really good. I haven't had any in a long time, and the last place I ate it was in a restaurant years ago. Funny I just haven't thought of it for years. I remember having it in a restaurant in the San Francisco bay area and having some really good french bread with it.Yours sounds delicious!

Your minestrone soup sounds so delicious and it's healthy, too! We had barbecued pork, parmesan noodles, and brussels sprouts. Jay didn't eat, so he will warm it up latter on.

@kobesbuddy Pesto has only basil, a bit of garlic and olive oil so the main small and taste is basil.
