I will try to make my own ham.

I saw this recipe on YouTube, and since I am bored and stuck at home. I will be making my own ham! I will buy two pork legs and a shoulder and try three different styles.
First is Italian style which is Prosciotto which means I will try to age dry the ham by hanging it on the ceiling. The Italian style uses curing salt.
Next is Chinese style, it will also be like the Italian style but with more spices. The Chinese style uses salt only.
The third one will use pork shoulder only instead of legs because it will be Christmas style which is just marinated on the fridge. Canada is a great place for making Ham because no flies.
I will also try experimenting on other meat like beef and rabbit.
Maybe I will try making my own bacon too since its just a marination process.

I felt like this pandemic will last for 3 to 4 years so I think I have all the patience in the world to ferment and dry age stuff.

@LadyDuck I know once you sliced it you have to finish it. I will use the excess to make homemade spam. I am not alone in my house so I have someone to eat it with.

@CaptAlbertWhisker Do not believe that it will last for 3 to 4 years if you do not have the right place to keep it and it only lasts until you do not start to eat the prosciutto, once started you must finish it in a short time.

Good luck. Keep them away from bugs of any kind. I´d leave one pork shoulder Or the legs to cook them and to make garbanzos (chickpeas) with them.

I got overwhelmed with the amount of salt needed to make them. I was thinking to reuse the salt for other meats.flies are not common here but there are still roaches. I won't eat the skin because they are exposed, so I won't mind if they get dirty from age drying.

I heard dried ham can last up 3 years. So that can be great emergency food.
