Chicken and Tofu Red Curry

Hi all, I would like to indroduce my wife's homecook creation, Chicken and Tofu Red Curry. My wife loves to do some experimental cooking, she loves modifying the ingredients, cooking methods, etc. This weekend her experiment goes to chicken curry, she adds more chilly and pepper on it, that's why it looks red. She also add more basil leaves and lemongrass which make its taste more spicy, I love the taste and aroma but honestly it's too hot and spicy for me. However our friends love it. What about you my dear Mylotters, what experimental dishes have you ever served?
