Crispy Fried Chicken

Our lunch for is crispy fried chicken. My husband wants his chicken to be crispy.
I learned the technique when I was observing the cook in a restaurant. Their kitchen was glass-walled so I could see how they did it.
Do you add other special spices to your fried chicken?

Did you coat the chicken meat with some batter or crumbs? I prefer boiling the chicken before frying.

@Janet357 if you boil it you're pretty sure it's cooked well. Add all the spices to the water and season with salt or patis (fish sauce) and pepper.

What's the technique you learned from the restaurant? As for me, I just coat the chicken with breading and fry it.

@Janet357 they say boiling makes tender but the skin still crispy/crunchy. sis just did it with pork ribs (kare-kare) and mother was happy because she was able to chew it (false teeth). they say that's how it's done with crispy pata and lechon kawali so maybe it will work for chicken, too. oh, and i remember rakski said it helps avoid bloody bits inside (chicken).

@hereandthere one secret with crispy lechon kawali is put is chill or freeze after boiling then deep fry.

I stopped frying chicken a long time ago. I really do like fried chicken. But somewhere along the line, I got lazy. I put the chicken in the oven and come back later.
