Day 4...And it's looking good...

Good afternoon from this side of the planet. It's 12:35 PM here and I am done with my lunch cooking. Well, I had done most of it before I logged in to work around 8:30 in the morning. And rest I took care of once the online school got over at 11:30. Since last one hour I have been cooking and answering notifications. I still have a lot to answer. But before I go to tidy up my kitchen, I thought to make this post.
I had shared about my fresh harvest of ginger and turmeric. Now here I share this collage showing what I did with some of them. I made pickles of turmeric and ginger with green chillies and lemon juice in it. Even the green chillies and lemon were from my garden
It's day 4 of the pickle. And it looks good and ready to be consumed So today I will bring it on table for lunch. Glad that last few days were sunny and the pickle could get it's share of sun exposure. I tasted one piece and it has come out perfect. Now I have a little bit ginger left with few garlics from my garden. I have some other plan with it. I will do that later in evening and maybe make a post here
I have to wait for another half an hour for my daughters and husband to join for lunch. They are busy with work and school. Meanwhile,I will go and tidy up kitchen and wash those few dishes in sink.
I will be here post lunch. Reading and responding and also knocking off more notifications

I love ginger, turmeric. We have plenty here in the market. My daughter is growing them.

It is good for health and they both are proved to improve our immunity. So it is good to consume them. And better if it is fresh from your own garden. Good that your daughter grows them. I am also trying to grow them in my garden as much as possible.

@Nakitakona That's what I did. It takes a long time more than 4 months. I have put some in two big pots. They should be ready in another 4 months.

You can see that in picture Judy. The yellow ones next to ginger is turmeric. So it's similar to ginger. It also grows underground like ginger and you can use a bit of it to grow the full pot of turmeric.

Oh! That sounds good. I know the way Indian make their pickle is very much different. You must be using raw papaya. And I bet it must be yummy and healthy.

It uses very little of turmeric. Too much of it can make it bitter. It's mainly gingerIt's cleaned, air-dried and then we peel and cut thin slices of ginger and some turmeric. I squeezed lemon juice in it, added few sliced green chillies, little ajwain, salt and mustard oil. Mixed them and kept them in sun for a couple of hours( not direct exposure) and now it's ready to eat.

@Sreekala I should do that soon. Thanks for reminding. This year due to pandemic,I have not been to mom's place and neither she has visited us. So out of pickles. Now using video chats and learning from her

It won't be kept for too long. A month or little more is all that we can keep it for. I have added salt,mustard oil and lime juice. And yes,all well dried before mixing and few days of sun exposure... that's it.

It's good. You have to consume them in a period of a few weeks. Can not keep it like mango and lemon pickles for long.

I uses a very little of it, thinly sliced and mixed there. It's mostly ginger there. It is tasty and yes not to mention good for digestion and immunity. It is a healthy pickle.

In India, pickle is a side dish for dishes. Mainly to enhance taste and this one does improve digestion and immunity. We have a variety of pickles. The number might run into hundreds.

Depends on the preparation of pickle. Some need long hours and direct exposure while some need less and not direct one. I know that it is not common with the preparation styles in other countries.
