The versatile sweet potato

Sweet potatoes are regularly consumed in our household . During my childhood days mother used to have loads of them as we were many in the house. She taught me to make them in several different ways.
Just boiled with a bit of salt is ok as a snack. We also slice them and deep fry them after coating the slices with gram flour batter to which chili powder, salt and ajwan is added. Have you tasted sweet potato pudding? It is delicious . We also boil sweet potatoes and cut them into large pieces and soak them in coconut juice that is cooked with jaggery and cardamom powder. We also cook them as a vegetable in a manner how other vegetables are cooked.
We also add them in the pork curry. Brinjals with sweet potato is yet another dish I enjoy.

I love eating them raw but Pretty prefers making them into fries and dropping them into a deep fat fryer then adding a bit of salt to them. (I'll eat a few of them that way, too.) Mom used to make sweet potato pie and most of my family liked that. Dad always planted a large patch of them for household use.

As a kid I remember eating them raw. Pie is a good idea. I will try that. I tried growing sweet potatoes but the mongoose destroyed the patch by diging into it.

@allknowing Hmmm... you might consider putting a mesh fence around the area where you plant them. Dad did that to keep deer and groundhogs out of the garden. I don't know if that would work for you or not.

I love sweet potatoes and enjoy them in all the dishes except the non veg ones that you mentioned. We also add them to Sambhar at times. And it tastes well when cooked with pumpkin with all spices.

@allknowing Yes, I’ve heard a lot of positive comments about that type of potato but I’ve never cooked. It can be purchased here only in very well stocked stores, it cannot be found in every one.

They have recently become much more popular (and hence widely available) over here, I think because they are supposed to be more healthy than regular potatoes. We make them into soups, add them to stews and curries, mix them into mashed potatoes, use them as toppings on dishes like 'cottage pie', make them into 'wedges', or just bake them.
What is sweet potato pudding?
It's a shame that they cannot be grown easily here.
