This is a common root tuber in my country.
Its rich in nutrients and a good source of carbohydrates.
Traditionally, it is boiled and taken with vegetables or roasted and taken with tea.
Recently, it has been cooked in various ways like
Fries, baked in cakes.
How is is prepared in your home country?

Same way... boiled and baked. We add salt and pepper if we want. Other way is to mash the boiled ones ,add milk to make a smooth paste and have it. You can add sugar or jaggery there if you like.
We also cook it as vegetables curry as we make our other curries. It goes well with brinjal and orange pumpkin.

I don't see this sweet potato in our local grocery store. But our orange colored sweet potato is prepared many ways. Baked, made into a pie, fried, etc. It's all good.
