Cauliflower Lasagna

Happy Thursday everyone! not to sound redundant but it's snowing AGAIN! The forecast keeps changing so I don't know what we'll wind up with. So far it's predicted anywhere from 3 inches to 12 inches. It's anyones guess what the total will be once it's over. Since it's a snowy day I need to have something satisfying for dinner. So I decided to make cauliflower lasagna. Instead of using lasagna noodles (pasta) I'm going to layer my lasagna using cauliflower. A little sauce in the bottom of the baking dish, layer of mashed cauliflower, a little more sauce, spread ricotta and sprinkle shredded mozzarella, add more sauce and continue until the baking dish is full. Cover with sauce and sprinkle mozzarella and parmesan cheese on top. Comes out delicious, is a healthy alternative to "real" lasagna and is filling. I've made this before and had to experiment a little with portions. I'm not adding any meat to this cauliflower lasagna but I suppose you could if you wanted to. That's my plan for dinner. I would need a recipe if I were trying to bake something @Marilynda1225 The last time I baked anything it was a cake made from a boxed cake mix.

@Marilynda1225 We do not do near enough meatless meals around here. I have a pork tenderloin in the slow cooker now and we'll have that on rolls and some baked beans on the side. We're such carnivores.

@Juliaacv I love meat too especially any type of beef. I'm trying to eat at least one meatless meal a week but I know I couldn't ever be a vegetarian or vegan.

Yes many many times over the years. Its an old weight watchers recipe from years ago that we eat frequently. Its diet friendly and I use part skim ricotta and low fat mozzarella. I know many people like cottage cheese instead of ricotta so I bet that would work just as well. This is one of my go to meals for a meatless dinner

Yes and I rarely measure so it can be fun the next round. I would not have thought to nah the cali but that would make it easier to spread evenly.

@MarshaMusselman even eggplant or zucchini is a good substitute for pasta but as good as it is nothing beats the real thing.

Subbing cauliflower for pasta, that is a great idea. I do experiment with recipes to make them as we like. I hope you enjoy and that you stay safe and warm.

If you like cauliflower its really good. It probably is more of a cauliflower bake than actual lasagna

That sounds delicious! Yes I love experimenting and I do it often especially with vegetable dishes. I have done lasagna using courgettes (zucchini) but not with cauliflower but I will try it out after reading this.

I do experiment with recipes. I have made lasagne with layers of eggplant and zucchini. No meat in that one either. It was delicious, but a lot of cheese. I may experiment and use lass cheese.

lasagna is an Italian dish and is absolutely delicious. However it's filled with calories so I've tried to cut back on the calories and make something that is healthier

Sounds good , cauliflower is one of my favourite vegetables and yesterday I made pakoras as a side dish , by dipping the little florets in batter and frying in hot oil.

No it doesn't taste like pasta but between the sauce and cheese it doesn't have a typical cauliflower taste.
