Who eats beets?

My mom canned pickled beets back in the day which I enjoyed as a side dish. Now I but then periodically in the store but I wonder whether the picking process actually removed the vitamin content. Does anyone know? I rarely buy them anymore for that reason but I still like them so for some yesterday and had some for an after dinner snack.

I like beets. I enjoy them several different ways. I like them in salad too.

@marlina I've never had beet soup before. But glad you like that. Is that the only way you eat them?

Not even the pickled variety? They're supposed to be very good for us but I don't know how they get cooked to get the best benefits.

I like beets but I cannot eat beets because I am prone to kidney stones. My doctor recommended not to eat beets.

@MarshaMusselman I did not know either, but the second time I had to go to the ER due to the pain from kidney stones they asked me if I used to eat beets and they told me to stop immediately.

That's too bad but at least your know. I didn't know it can affect those prime to kidney stones.

I don't know that pickling necessarily removes all the nutrients, but I do know anything cooked or processed in some way loses SOMETHING. Either way, beets are one of those foods I never ate before I met my wife. Even at first I was not that fond of them, but over the years they have grown on me. And while I still do not eat them often, I do actually like them now. But always canned. I cannot eat fresh. Even if I cook them from fresh.

I may one day try cooking them from fresh and pickle them myself and make sure to use the juice too as that's where many nutrients leach off to. Or I think that's correct.

I never eat beet. I want to try but I don't know what to expect of the taste nor how to cook it.

Do your stores there have any ready to eat? It's a riot vegetable but not sweet like carrots. Sugar must be used in the picking process because they are a bit sweet that way and that, pickled beets or Harvard beets are my favorites. I don't know the difference between pickled and Harvard beets though. Maybe I'll look it up later.

So they say. Maybe they are better when not pickled. I don't really know. Or when's we cook them ourselves. So you buy them from the stores?

I can pickled beets and I have always been told by my mother and grandmother, that they retain their healthiness thru this process. Otherwise, I would research it to find out for sure.

I buy canned beets, add some apple cider vinegar and love them on a salad.

Read on the side of the can, it should say how many vitamins these beets have. I love them!
