More microwave baking

In a fit of enthusiasm after my previous coffee-and-walnut-cake success, and after realising that the recipe was very similar to a ‘normal’ (i.e. conventionally-baked) cake recipe, I thought I would try a regular sandwich cake and take it round when we called on our neighbours. I made the mixture as usual and divided it between two silicone cake ‘tins’. Then I cooked each one separately in the microwave for a couple of minutes. After that they were both still a bit gooey-looking in the middle, so I cooked each one again for another minute or so. I can’t remember the timing exactly but I think it was perhaps 30 seconds too much as the cakes ended up a tiny bit dry around the edges. As a first attempt though it was pretty successful. They did look pale of course (not suitable for @vandana7 who has admitted to being scared of white cakes!) but filled with cream and jam and topped with sifted icing sugar the end result was quite presentable and the flavour was good! Oh wow, with a microwave? That's pretty impressive. I've never experimented baking a cake with a microwave before. Sounds delicious too!

Some things work better than others. We have a recipe for microwave chocolate brownies which is excellent, and I tried coffee and walnut cake which I posted about before, that was a big success too. I would recommend trying one of those as a first attempt. I can give you the recipe if you like.

I am excited actually. The last time she gave me a recipe, we planned something else (neighbors), so I have yet to try it out. But I am now happy that my microwave is useful. :)

@vandana7 No it wasn't better than a regular oven, though it was certainly quicker. It wasn't quite as good, though if I tinker with the timings I might be able to make it just as good.

Just the usual sandwich cake size (I used my normal-size pans) these are 8 inches (20 cm) across.

I think that all cakes cooked in a microwave are dry around the edges, no matter what you do. I donated my microwave, I never liked it.

@Fleura I only baked a few times using the microwave. As the final result was all the time inferior to the same cake baked in the traditional oven, I gave up. As a microwave oven excites the water within the food there is no way to keep the cake more moist.

@LadyDuck That's a good point. Maybe the result will never be as good. We don't have any other oven at the moment so I may as well have a few more tries though!

I was a bit surprised, because it tends to heat the centre of things. Maybe something like a lemon drizzle cake would be a good idea, since it gets moistened after cooking.

Oh, wow! That looks delicious! I've never tried actually cooking in the microwave before. I just use it to heat stuff up. And vanny seems to be scared/bothered by anything "white". (Poor vanny... we treat her so badly. )
