July- September months are bamboo shoot months/season for us along with other seasonal vegetables. It is widely available in the market and best part is getting to buy fresh cut ones. One of the biggest reason why I missed home in this month. I always wants to fly back to home just to eat one fresh dish. It says there are nearly 90 bamboo species in Northeast of India and out of which, only 3 species are considered edible one Bambusa balcooa, Bambusa pallida and Melocanna baccifera. Personally I enjoy eating the boiled and fried one. In some occasion, I love cooking with fish, meats, paddy field's snails so as with crabs and sometimes with lentils. The easiest one to cook for me is to boil and recook with lentil. Please note : Why yellowish colour? It is because tinge of turmeric powder was added moreover, if you boiled and keep it for overnight it will also turn yellowish colour. Even here many prefer as a curry. Were Indonesian also fermented the bamboo shoots?

@psanasangma fermented bamboo shoots? As far as i know people in my place didn't do that, but who knows about other province. But most common fermented food in Indonesia are tapai ( a fermented cassava ), tofu, and tempe or in my place fermented durian ( some place called it tempoyak, but in ny place we called it asam durian )

@Adimts Fermented is quite smelly with sour taste. I think August month is the best season to put. Actually it is like traditional preservation and it will be ready by 4-5 month. My people cook with meats or fish but my best way to do is making pickles

We can only find bamboo shoots canned, I use them when I prepare some curries.

I have never tried canned one. I think canned packaging ones are not available here but we have in the form of pickles.

I see! It may be because particular bamboos are grown there, or may be because of geographical location as they are native to moist tropical and to warm temperate climates. If you happen to travel to some of the Asian country during the month of June- September, you are probably going to come across with this cuisine.

Mmm, bamboo shoots! Love the tips if bamboo. I like it stir fried with other veggies or stewed. Great with white rice.

My mom makes delicious spicy pickles from those tender bamboo shoots and also one curry after steaming it. I like both of them. So, what you plan to cook today?

Still yet to decide. May be bamboo shoot again I always prefer to eat spicy pickle. I remember once I purchased from Kerala store in Delhi during International trade fare. Though it was different from ours but I love eating it and finish it within a week.

@psanasangma I have never tried any bamboo shoot pickle or curry other than that of my mom and grandma. So, I am not aware of how others taste. But I bet that they taste equally good. And that always happens with pickles. Once the bottle is open, it is gone sooner than expected.

You are welcome Yumeko! I think bamboo are grown at moist tropical and to warm temperate climates places that's' why it is not grown. In fact even in central Indian states, bamboos are not grown and hardly finds them

Here we eat bamboo shoots together in a Chopseuy or in Noodles. I like to eat it in small cuts and when it is soft.

Try to visit Northeastern parts of India in the month of June- September. In the city areas, you might not get in local restaurants but if you visit small town areas you will get chance to try it As you have never tried, I suggest you not to go for fermented one, you may not like it but you can try pickle.

I don't have it here where I live but when I went to my uncle's house, aunt made some dishes. They tasted good specially as pickles.
