I am in a mood for something different and although it was hot, I made Kropsu. That is a baked pancake from Finland. I got the recipe from my husband's cousin's wife. It is very much the same as pfannenkuchen. in my opinion.
I was out of maple syrup so I made "cherrymoos" which is a German Mennonite hot cherry pudding. I had dried cherries and it was very tasty. I added cinnamon which is not usually called for.
We rounded it out with sausage patties.
And we have leftovers, that is a good thing.

I used to love to eat pancakes. I made chocolate chip ones. They are very filling and these days I cannot eat more than one so do not make them anymore. I hope you enjoyed all of it.

The recipe I have in my (American) cookbook for pfannenkuchen is similar to the Kropsu. The first I had pfannenkuchen was in a "dutch" restaurant and the waitress came running out of the kitchen with an iron skillet so that we could see it before it collapsed.That could be just an American way of choosing to call it what they want to. What is called Swedish pancakes in this area is a lot like French crepes and is served with strawberries. Hubby's family did not serve the kropsu with berries but I know in Finland they surely do. I like them all. Hubby wanted apples on his, which is what I would usually do, but I do not have any apples here at the moment.

@GardenGerty Pfannenkuchen is German and it is flat, the Dutch pancake is different it is made in an iron skillet and it collapses as soon as it cools down a bit. Kropsu is Finnish and they serve the kropsu with berries. Swedish pancakes are exactly like crêpes, I had them at the Ikea restaurant (100% Swedish) they served with blueberries.

Breakfast for dinner sounds good to me. I've eaten it a number of times. It stands to reason, given that I usually have lunch for breakfast.
