Do you like Chicken Stew (Afritada)?

Hello Good Morning/Afternoon/Evening to all my dear mylotters
I woke up in a very nice weather. Sunny and cool air. I had a great morning walk and a dancing exercise I will again have an evening walk later I just like to take advantage of the good weather as long as it is doing good
Today, I will prepare this simple dish I learned from my mother. It is a very simple dish. You just have to fry the chicken. After that you prepare the sauce. Fry the onion, garlic, potatoes and carrots. Pour a 4 cups of water or depends on how much kilo you have. Then, put some tomato sauce and a teaspoon of soy sauce or salt whichever you like. Let it boil for 3minutes then mix the chicken and let it boil for 2 minutes. Then put some red bell pepper. let it boil for a minute. Then serve it with steamed rice

Chicken afritada is a common dish in our household and I'm sure in most Filipino homes. Our version at home has fresh sweet peas or canned peas if fresh is not available.

@m_audrey6788 I also combine red and green bell pepper so together with the green peas it would give the dish more green color instead of all red. Another thing we do if I may share it is to slightly fry and brown the cubed or diced potato before mixing so it would leave that toasted fried potato taste on the dish.

I prepared some curry with righed gourd and potatoes, some smashed boiled potatoes sauted with oil,lentils and steamed rice for lunch.

@m_audrey6788 Yes, you can try out the curry. I use paste of poppy seeds, ginger and green chilly.

I like Afritada too and that recipe reminds me of my grandma.
I've learned that dish from my grandma and each time I cook Afritada it brings me back to my childhood.
Now, I am thinking of preparing that dish

Thanks , but I am sure you also cook Afritada the best way you could.
I guess we have different style of cooking it just like Adobo that's been cooked differently depends on our preferences (dry or saucy)

I like chicken stew but we only put deboned chicken into it. It seems like it would be too messy eating chicken off the bone with it covered in stew juices.

One of the most well loved dish here in the Philippines. Chicken Afritada, most of the time in most of the ocassions here in the Philippines, one of the commonly served dish to our guest is Chicken Afritada. I personally loved dishes with sauces and colorful one. For me, more color means it's more nutritious and delicious. For my Chicken Afritada, i usually add pineapple chunks to make it more nutritious and flavorful. Have you tried adding pineapple chunks in it?
