I decided I wanted a different way to cook chicken last night. We love chicken and it it almost everyday since it's a more affordable protein. I looked at several recipes yesterday just looking for something that would be tasty and different. I came across several calling for spatchcock chicken. I had never heard of spatchcock chicken so I decided to give it a try. I watched a couple tutorials on youtube on how to make it. You have to cut the spine out of the chicken and lay it flat so that the heat it distributed evenly. We have a Pit Boss XL so I decided to season well and smoke it. It took roughly about 4 hours on the grill fluctuating between smoking and grill function. And oh my goodness, this was the most delicious chicken I have ever ate. Give it a try y'all, you would not be sorry. Yum! And I tried to add a picture of it but keep getting a run time error
