What’s For Supper Tonight?

In an effort to save a bit of money and eat healthier food, my husband suggested we buy a butternut squash, and he’s use it and the carcass from our BBQ chicken, to make a pot of soup. I can smell it cooking.should be ready around 6 PM. Never liked squash when I was growing up, but then I didn’t get it in soup the way hubby makes it. Yummy! What’s everyone else having?

I had meat loaf, cheese, green and red bell pepper omelette partnered with whole wheat brown bread and a large banana. I did not like squash as a kid too but I've learned to love it and would eat whatever way it's cooked or prepared.

Abendbrot / Brotzeit
Mhh, we do love a good pumpkin soup with some sweet potato mixed into it. I guess we will a typical (cold) German dinner today: Abendbrot. ["evening bread"]

I didn't really have dinner yesterday, just munched a bit of this, a bit of that throughout the day... didn't feel like cooking.

I became a fan of butternut squash a number of years ago with our first CSA share. I don't think that I'd ever actually worked with it before that. Last night was leftover spanokopita for dinner. This post has inspired me to start prep on a pumpkin, so there will likely be pumpkin soup or a pumpkin-y pasta dish on the menu for dinner tonight.
