Belated October recipe report card

Mylotters, sorry I’m posting this a bit late. Due to working on a 2-week Upwork assignment and have a couple rough nights with Wylie once again, I didn’t get a chance to post this last week. Overall, it was a pretty decent month for recipes, except I didn’t get a chance to do the last one on the list. Here’s the lowdown on how everything went for me last month. Some fared well and some missed the mark.
1. Slow Cooker Thai Chicken Soup-A-. This wasn’t exactly soup. Just Thai chicken with rice at the side. It was so easy to make it and delicious to eat. Not too spicy for me either. It had just the right amount of spices to make it mild enough for my standards. Leftovers came out pretty good too.
2. Orecchiette with Butternut Squash, Kate, and Sausage—A+. This was one of my favorites to make in less than a half-hour to have a full meal. I loved the pumpkin puree with kale and sausage to make it scrumptious and delicious for one big helping. Leftovers were amazingly the same to eat.
3.Vegan Baked Spaghetti Squash with Pumpkin and Green Onion Alfredo-B. This was a nice twist to have baked squash for an easy vegetarian meal. I just wished my sauce didn’t come out watery and not so creamy. The first half I had was on the squash itself and forgot to scoop it onto the plate. But I did do that for leftovers which came out delicious as well.
4 .Swiss Potato Soup—B. This was a pretty simple new version of potato soup to make with melted Swiss cheese. It did come out real good, though I wished I’ve made my chopped potato pieces a bit smaller than the big chunks I’ve had cut up. But two rounds of leftovers tasted so well to have on a cool fall night.
5. Gnocchi with Bacon and Creamy Pumpkin Sauce—A+. This was another one of my top picks for this month. I loved the pumpkin sauce and the bacon bits to make it taste so deliciously good in every bite. And a standing ovation goes to how well the leftover gnocchi came out for an encore of goodness.
6.Green Goddess Salad with Chickpeas-C. Although this looked good in the photo and tasted well, it fell apart with the sauce that made it not so appetizing. The best part was the chickpeas of course since it was edible. This might be up for redemption in 2022 to give it a try. No leftovers.
7.Slow Cooker Gigante White Beans—A. This reminded me of bean with bacon soup. It was so fulling to top it over toasted bread in a bowl and so flavorful in every bite. I had two leftovers round with this recipe to make it worthwhile for a quick meal. I love simple recipes like that.
8. Pumpkin Smoothie-Incomplete. I didn’t get a chance to make it due to low energy and ran out of time. I also didn’t make the peach parfait. But I hope to make both of these desserts this month before the weather gets colder and turn to winter. Both dessert items are on my list for this week since the weather’s in the 60s, which is good enough for me.

Slow. Had one week of training last month, got paid last weekend via mail, and waiting to be called in. Though I did get painful feedback from the high school two weeks ago, I'm still hanging in there and will post about it tomorrow.

Pretty much. Haven't had a recipe that failed and needed redemption yet. Who knows?
