What's cooking and baking for mid-November?

Mylotter friends, sorry for posting this later than usual. Due to my two-week Upwork assignment that I finished yesterday afternoon, I’m ready to share my belated mid-November recipe list with you.. I’ve had a bit of a head start by making the first three recipes last week. The leftover pumpkin smoothie is added to my list, though peaches are out of season, this recipe is on hold for another time to make it. Here’s what I’m planning to make for this month including some seafood side dishes, and a dessert to round this month out. Here we go!
1. Creamy Garlic Chicken Pasta (Pinterest)—This recipe was the first one I made last week to kick off this month. Who could resist a hearty combo of pasta (any kind) and chicken breast in a one pot meal to fill up you in on a warm or cold late fall evening.
2. Slow Cooker White Wine Chicken Stew (Ambitious Kitchen)—This was the first slow cooker recipe I’ve made last week in my slow cooker. Besides chicken and a couple of veggies in a stew, you can cook this on high or low speed and pair it with cornbread, salad, biscuits, or any other side dish if not a stand alone by itself. It’ll fill you up and keep you warm on a cool autumn night.
2. Anna’s Easy Pleasey Meatballs Over Buttered Noodles (All Recipes)—This recipe only requires slow cooking for the meatballs and boiling the pasta in a simple delicious rendition of Swedish Meatballs. A delicious easy meal to make in three hours to serve from crockpot and pot to the plate. I’ve made this over the weekend.
3. Lemon Garlic Parmesan Shrimp (Pinterest)—This is another delicious combination of pasta and seafood to whip up in one dish. Shrimp, linguine, and a yummy parmesan sauce was last night’s dinner tonight. And this dish can be made in less than a half-hour tops. I love recipes like that for any type of dish.
4. Crockpot Taco Shells and Cheese (Ambitious Kitchen)—The taco shells is actually shell pasta, which I assume it’s medium and not small or big. You can use ground meat or turkey with cubed Velveeta for the cheese sauce. And this slow cooker dish can be cooked in a few hours and paired with any side dish. I plan to make this dish mid-week for a simple meal to whip together.
5. Chicken Parmesan Soup (Pinterest)--Yes, you’ve heard me. Chicken parmesan as a soup. All the ingredients are made into a soup except for the pasta. I’ve thought this would be an interesting twist on the classic meal to warm me up this month. This would be a great dish to make next week right before Thanksgiving since it’ll be back to being colder weather again.
6. Roasted Butternut Squash Salad with Burrata (EatingWell)—This would be a great fall dish to make this Friday since it’s bit warmer for a shorter bit. I’ll be replacing burrata with mozzarella, since burrata isn’t found in the region. But I love butternut squash and any dish that requires butternut squash, cubed or otherwise.
7. Roasted Butternut Squash Broccoli Cheddar Chicken (Ambitious Kitchen)-This is another great fall recipe with chicken and butternut squash and broccoli for one dish. It looks so delicious and hearty in the photograph on the website. This would be served a week from today on another mild cold night.
8. Slow Cooker Italian Chicken Alfredo (AllRecipes)—This recipe is another slow cooker chicken dinner that’s tasty and flavorful to make in 5 hours. Pair it with spaghetti and you have a complete meal. I plan to make this dish toward the end of the month.
9. Butternut Squash Soup with Rosemary and Bacon (Woman’s Day)—This soup is one of the two I’ve found from a fall soup article on Woman’s Day’s website. It’s perfect to make on any weekday and to warm you up on a chilly evening. Carrots, rosemary, bacon, butternut squash, and a baguette are the few ingredients you would need to make this soup. This would be made during this weekend.
10. Oh so good Chicken Meatballs in Pumpkin Coconut Curry Sauce (Ambitious Kitchen)—This is another recipe I’ve selected from the AK website to fill out this full month. You can use ground chicken or turkey to make these meatballs in this yummy pumpkin curry sauce. Even better, you can pair it with coconut rice, rice pilaf, or another side dish of your choice. I’ll be making this a week from today.
11. Cinnamon-Spiced Sweet Potato Soup with Maple Croutons (Woman’s Day)—This is the other soup recipe I’ve found from Woman’s Day’s website two weeks ago. Sweet potatoes, stale bread for the croutons, carrots, and a few other ingredients to make this delicious soup to keep you warm and full. I plan to make this soup toward the end of the month too.
12.Crockpot Chicken Chowder (Ambitious Kitchen)-To wrap up my full mid-November list, here’s the last one of my dinner recipes for my recipe list with this final soup. Chicken breast, green beans, BBQ sauce, bacon bits, shredded cheese, corn, and cornbread make this meal delicious. I plan to make to this chowder this coming weekend,.
13. Quadruple Chocolate Crockpot Cake (Ambitious Kitchen)—For my only desert recipe this month, I’ve thought to make this exquisite cake in the crockpot with devil’s food cake mix, chocolate chips, chocolate pudding mix, and vanilla ice cream. This is going to be made during Thanksgiving next week as my dessert since I’ll be spending it at home.
Bonus: Since I have plenty of leftover frozen fish (tilapia, Cod, Mahi Mahi, Salmon) in the freezer, I’ve thought to pair them up with different side dishes other than French Fries to change things up, all from the InsanelyGoodRecipes.com website. 14a. Lemon Roasted Parmesan Broccoli—All you need is broccoli, garlic, lemons, and parmesan cheese. I’ve made it this last week with Mahi Mahi for a healthy side dish. 14b. Panzanella Salad—Ciabatta bread, oregano and thyme, mozzarella cheese (if you can’t find buffalo mozzarella cheese, kalamata olives, grape tomatoes, and white cheddar. I plan to make this side dish this weekend. 14c. Rice Pilaf—almonds, rice, carrots, parsley are the key ingredients for this side dish. This would be made next weekend. 14d. Crispy Greek Roasted Potatoes—Baby Yukon, dried marjoram and bacon are all you need. This would be made later this month too.

What’s cooking? Nada wholadda. I usually eat my big meal at lunch, so dinner is very light, such as a bowl of soup, a sandwich, or yesterday’s fare, a couple of waffles!
But ooh, the Parmesan broccoli sounds delicious!!!

Hey Ronald, long time no see (even at Hub Pages too, though I haven't done much there in a year or so). Thanks. It was long and exhausting and well worth it for the money. I agree. Now I wait for the next big or moderate task to pave my way.
