I love peanut butter cookies, and they are hands down my favorite although I try not to make them often as I will just gobble them. However, I found an easy recipe that doesn't make a boatload of cookies..all you need is a cup of peanut butter, a cup of sugar and one egg. They are quite tasty, but not as good as some so I don't think I will over indulge on these. These arent the cookies or recipe as pictured, I just thought these looked good. Do you ever make peanut butter cookies?

Like you, I do not make peanut butter cookies often because I love them and would leave crumbs from a batch in record timing. Not good, not good at all. You can dine on these if you lose your power and need to keep your iron intake up. Remember, just put a cookie on a plate, and get your fancy steak knife out and your fork and it will turn into a substantial steak dinner to warm you up and keep you healthy. Don't I have a healthy imagination???

@snowy22315 Noooooo, please don't test my math skills so early on a Sunday, pleeeese. We all need to let loose once in a while. And I'm sure that 1 of those that you ate was for work-you know, that quality control job.

@1creekgirl That would have been good, or a little salt. If I make these again, I will add a small amount of salt.

@snowy22315 I usually just have a cookie or two then my husband and the teens eat all the rest.

@shaggin I like them too much to just eat one or two, that is why I don't make them much.

I like them because they are easy to do, and not too messy. Plus they don't make enough for an army, and I don't need like 3 dozen cookies hanging around.

I have made them dozens of times, but not using flour anymore. The flourless ones are easier, and even better.

I'm getting a hankering to try to make some ginger biscuits (cookies). The ones you buy here are very sweet. I thought I might make some with Splenda so my husband can enjoy them too.

I make Peanut Butter Sandwich cookies. Cream filling: 1/2 cup creamy peanut butter 3 cups powdered sugar 1 tsp. vanilla extract 5-6 Tbl. milk Beat the above ingredients in a bowl until smooth. Spread on half of the cookies and top with another cookie. Soooooo good!
