Frugal meal: veggie soup

Totally uninventive here but my mom gave me some veggies that she wasn’t going to have time to use, so I decided to make an improvised crock pot soup. She gave me 3 potatoes, a bag of carrots and a bag of celery. I chopped them up, with about 10-12 cups of veggie broth, a bunch of seasonings, and then ignored it for 8 hours on high. The seasoning I used this time was veggie broth, smoked paprika, coriander, rubbed sage, and oregano. It gave it a “meaty” flavor. I did spend this on additional items: $3 cheese $1 saltine crackers All in all, a very basic soup with good seasoning that turned out good-made maybe 10 servings for $4.00 out of pocket. Score! I was reading on someone’s frugal blog how at the end of the week, whatever leftover veggies they have they make a soup out of, and I love the idea. I try hard not to waste food, even if that means making somewhat weird recipes or getting creative. So this was my “whatever” soup. With the ingredients, it wouldn’t cost much more than $10 to make, I wouldn’t think. I do get tired of soup but have not yet this year! Do you have any frugal recipes or made any good soup lately?

8 hours is too long to cook veggie soup. You have just destroyed all the valuable nutrients . Once the potatoes get soft which will take maximum say 35 minutes your soup is ready.

You can put almost anything in soup but it's an especially good way of getting rid of leftover vegetables.

I'm unable to cook anymore; but when I did, my husband doesn't like soup. He feels it's not filling enough. I, on the other hand, love soup and have it quite often.

Your veggie soup looks so delicious. I like to eat hot soup, it is very healthy for the body. Because it contains vegetables too.

I'm always looking for ways to cut back on the cost of meals and soup is a good way to do that. Your veggie soup would definitely be something I would enjoy

I have 2 big containers of leftover potato soup in the freezer! I like to have the leftover soup on days when the roommates are having a dinner that I do not like. For example, tomorrow, they are having a roast. So, I might have some potato soup and a tuna salad sandwich. Yes?
