Smoked Brisket

I purchased a PitBoss wood pellet smoker about a month ago and after "practicing" with steak and chicken, I finally took the plunge and smoked three (3) briskets.
I bought the briskets at Costco and they averaged $60 each. I knew very little abut picking out a good brisket but I knew (from watching videos on YouTube) that there was a fatty side that should be facing down when you put them in the smoker so I wasn't too concerned with the amount of fat on the brisket. I should have been...
I bookmarked a good YouTube video that explained how to smoke the brisket and I followed the directions closely. Everything went well and after about 10 hours I had some good looking briskets. We tasted several pieces and were surprised at how good and moist it was.
The only downside was the amount of fat in the meat. I think next time I'll pay a little more money and get a better cut of meat.

The flavor of a steak is improved by the marbling of fat through it. Anything smoked or baked, though, shouldn't have too much fat or you end up with your money melting away. (When baking meat, you can use some of the juices to make a delicious gravy. That gravy goes well ladled over the meat on your plate.)
